Ingredients
- 2 cups shredded chicken
- 1/2 cup Pad Thai Sauce
- 1 large red bell pepper thinly sliced
- 2 large scallions diced
- 12-16 large egg roll wrappers
Instructions
- In a large mixing bowl, mix the shredded chicken and the Pad Thai Sauce
- Use a pastry brush or your finger, wet the wrapper’s edges, and then put about 2 to 3 tablespoons of filling in the center of the egg roll wrapper. Add a couple of slices of red bell pepper and a few scallions slices.
- Fold the egg roll by folding it, overwrapping the filling.
- Spray the air fryer basket with cooking spray, and then place the egg rolls into the air fryer basket. Set the temperature to 350 degrees F for 5-6 minutes.
- Plate, serve, and enjoy!
