Instructions

Step 1: Mix the Dry Ingredients

  1. In a medium mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

Step 2: Cream the Butter and Sugar

  1. Using a mixer, cream butter and sugars at medium-low speed until smooth (about 2 minutes).
  2. Add the egg and yolk, and mix at medium-high speed for 1 minute.
  3. Scrape down the bowl, add vanilla, and mix until thoroughly combined.

Step 3: Combine Wet and Dry Mixtures

  1. Reduce speed to low and slowly add the dry ingredients. Mix until just combined.
  2. Add the rolled oats and fold them in using a spatula.

Step 4: Chill the Dough

  1. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.

Step 5: Prepare Air Fryer and Scoop Dough

  1. Preheat the air fryer to 300°F (150°C) for 3–5 minutes.
  2. Line the air fryer basket with parchment paper.
  3. Scoop 1 ½ tablespoon of dough and roll into balls. Place them in the basket, spacing them at least 2 inches apart (bake in batches if necessary).

Step 6: Bake the Cookies

  1. Air fry at 300°F (150°C) for 12–16 minutes, flipping or rotating the tray halfway through. Bake until golden brown and crispy.
  2. Remove and let the cookies cool in the basket for 2–3 minutes, then transfer to a wire rack to cool completely.
