Step 1: Mix the Dry Ingredients
- In a medium mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Step 2: Cream the Butter and Sugar
- Using a mixer, cream butter and sugars at medium-low speed until smooth (about 2 minutes).
- Add the egg and yolk, and mix at medium-high speed for 1 minute.
- Scrape down the bowl, add vanilla, and mix until thoroughly combined.
Step 3: Combine Wet and Dry Mixtures
- Reduce speed to low and slowly add the dry ingredients. Mix until just combined.
- Add the rolled oats and fold them in using a spatula.
Step 4: Chill the Dough
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
Step 5: Prepare Air Fryer and Scoop Dough
- Preheat the air fryer to 300°F (150°C) for 3–5 minutes.
- Line the air fryer basket with parchment paper.
- Scoop 1 ½ tablespoon of dough and roll into balls. Place them in the basket, spacing them at least 2 inches apart (bake in batches if necessary).
Step 6: Bake the Cookies
- Air fry at 300°F (150°C) for 12–16 minutes, flipping or rotating the tray halfway through. Bake until golden brown and crispy.
- Remove and let the cookies cool in the basket for 2–3 minutes, then transfer to a wire rack to cool completely.
