Step 1: Prepare the Egg Mixture
In a mixing bowl, whisk together eggs, heavy cream, cheddar cheese, salt, and pepper until well combined.
Step 2: Cook the Bacon & Spinach
In a pan, cook the chopped bacon until crispy. Remove and set aside.
In the same pan, add olive oil and cook the spinach until wilted.
Step 3: Assemble the Quiche
Grease a 7-inch (18cm) air fryer-safe pie dish with butter.
Scatter the spinach in the dish, followed by the bacon, shredded carrots, and sliced spring onions.
Pour the egg mixture evenly over the vegetables, ensuring it spreads through all layers.
Top with extra shredded cheddar cheese.
Step 4: Air Fry the Quiche
Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
Place the quiche in the air fryer and cook at 320°F (160°C) for 25–28 minutes, or until set in the center and golden brown on top.
Step 5: Cool and Serve
Let the quiche rest for 5 minutes before slicing.
Enjoy warm or store leftovers in the fridge for up to 3 days.
