Step 1: Prepare the Cookie Dough
In a mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Add eggs and vanilla extract, mixing until well combined.
Step 2: Combine Dry Ingredients
In a separate bowl, whisk together flour, baking soda, cinnamon, and instant oatmeal.
Gradually mix the dry ingredients into the butter mixture until just combined.
Step 3: Add Mix-ins
Fold in chocolate chunks, chocolate chips, walnuts, and shredded coconut.
Use a 3-tablespoon cookie scoop to portion the dough onto a parchment-lined tray.
Chill the cookies in the refrigerator for 1 hour.
Step 4: Air Fry the Cookies
Preheat the air fryer to 320°F (160°C) for 3–5 minutes.
Place cookies in the air fryer basket, leaving space between them.
Air fry for 8–10 minutes until golden brown.
Step 5: Cool and Serve
Let cookies rest in the air fryer basket for 5 minutes before transferring to a wire rack.
Enjoy warm or store in an airtight container.
