Instructions
1. Sauté the Ingredients:
- Heat olive oil in a large pot over medium heat.
- Add the chicken and cook for 5 minutes until lightly browned. Remove and set aside.
- In the same pot, sauté onions and garlic for 2 minutes until fragrant.
- Add carrots, potatoes, and green beans. Cook for another 3 minutes.
2. Simmer the Stew:
- Pour in diced tomatoes and chicken broth. Stir well.
- Add salt, pepper, paprika, thyme, rosemary, and the bay leaf.
- Return the chicken to the pot. Cover and simmer on low heat for 30 minutes.
3. Thicken the Stew (Optional):
- If a thicker consistency is desired, mix flour or cornstarch with water and stir into the stew.
- Simmer for another 5 minutes until thickened.
4. Serve and Enjoy:
- Remove the bay leaf and serve hot with crusty bread or rice.
