Instructions

 

1. Sauté the Ingredients:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken and cook for 5 minutes until lightly browned. Remove and set aside.
  3. In the same pot, sauté onions and garlic for 2 minutes until fragrant.
  4. Add carrots, potatoes, and green beans. Cook for another 3 minutes.

2. Simmer the Stew:

  1. Pour in diced tomatoes and chicken broth. Stir well.
  2. Add salt, pepper, paprika, thyme, rosemary, and the bay leaf.
  3. Return the chicken to the pot. Cover and simmer on low heat for 30 minutes.

3. Thicken the Stew (Optional):

  1. If a thicker consistency is desired, mix flour or cornstarch with water and stir into the stew.
  2. Simmer for another 5 minutes until thickened.

4. Serve and Enjoy:

  • Remove the bay leaf and serve hot with crusty bread or rice.
