Instructions

Step 1: Prepare the Crust
  1. Preheat your air fryer to 160°C (320°F).
  2. Lightly spray a small tart tin with cooking spray.
  3. Press the shortcrust pastry into the tin, trimming any excess.
  4. Prick the base with a fork and air fry for 5 minutes until slightly golden.
Step 2: Make the Filling
  1. In a bowl, whisk together eggs, lemon juice, zest, sweetener, cream cheese, cornstarch, and vanilla until smooth.
Step 3: Air Fry the Tart
  1. Pour the lemon mixture into the pre-baked crust.
  2. Return to the air fryer and cook for 10–13 minutes until set but slightly wobbly in the center.
Step 4: Serve & Enjoy
  1. Let the tart cool completely before slicing.
  2. Optional: Dust with a sprinkle of sweetener or top with fresh berries.
