Instructions

Step 1: Prepare the Vegetables
  1. Shred the green and purple cabbage finely.
  2. Grate the carrot and mix with the cabbage in a large bowl.
Step 2: Make the Dressing
  1. In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, vinegar, honey, salt, and pepper.
Step 3: Combine & Chill
  1. Pour the dressing over the shredded vegetables and mix well.
  2. Cover and refrigerate for at least 30 minutes before serving.
Step 4: Serve & Enjoy
  1. Give the coleslaw a final stir before serving.
  2. Enjoy as a side dish or as a topping for sandwiches and wraps!
