Step 1: Prepare the Batter
  1. In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together sour cream, melted butter, and egg.
  3. Combine the wet and dry ingredients, then fold in the canned corn and creamed corn.
  4. Stir in shredded cheddar if using.
Step 2: Air Fry
  1. Preheat your air fryer to 160°C (320°F).
  2. Grease a small baking dish or oven-safe container that fits in your air fryer.
  3. Pour the batter into the dish and smooth the top.
  4. Air fry for 25–30 minutes or until golden brown and set in the center.
  5. Check doneness with a toothpick—if it comes out clean, it’s ready!
Step 3: Serve & Enjoy
  1. Let the casserole rest for 5 minutes before serving.
  2. Enjoy warm as a side dish with your favorite meals!
