Step 1: Prepare the Batter
- In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together sour cream, melted butter, and egg.
- Combine the wet and dry ingredients, then fold in the canned corn and creamed corn.
- Stir in shredded cheddar if using.
Step 2: Air Fry
- Preheat your air fryer to 160°C (320°F).
- Grease a small baking dish or oven-safe container that fits in your air fryer.
- Pour the batter into the dish and smooth the top.
- Air fry for 25–30 minutes or until golden brown and set in the center.
- Check doneness with a toothpick—if it comes out clean, it’s ready!
Step 3: Serve & Enjoy
- Let the casserole rest for 5 minutes before serving.
- Enjoy warm as a side dish with your favorite meals!
