Step 1: Prepare the Ingredients
- Preheat the air fryer to 200°C (400°F).
- In a bowl, toss cauliflower florets and chickpeas with olive oil, honey, curry powder, smoked paprika, garlic powder, salt, and pepper.
Step 2: Air Fry the Cauliflower & Chickpeas
- Spread the cauliflower and chickpeas in the air fryer basket in a single layer.
- Cook for 12–15 minutes, shaking halfway through, until golden and crispy.
Step 3: Grill the Halloumi
- While the cauliflower and chickpeas are cooking, heat a grill pan or a non-stick pan over medium heat.
- Grill the halloumi slices for 1–2 minutes per side until golden brown.
Step 4: Serve & Enjoy
- Plate the roasted cauliflower and chickpeas.
- Top with grilled halloumi and garnish with fresh parsley.
- Serve with lemon wedges on the side.
