Step 1: Prepare the Caramel Base
- In a saucepan over medium heat, melt the butter and brown sugar, stirring until dissolved.
- Remove from heat and mix in the caramel sauce, peanut butter, and vanilla extract.
Step 2: Combine & Shape
- Stir in the quick oats, pecans, and chocolate chips (if using).
- Let the mixture cool slightly, then scoop into small mounds onto parchment paper.
Step 3: Chill & Serve
- Sprinkle each cookie with sea salt flakes.
- Refrigerate for 30 minutes until set.
- Enjoy straight from the fridge or at room temperature!
