Step 1: Prepare the Batter
- In a bowl, whisk together mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract.
- In another bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the nuts if using.
Step 2: Air Fry
- Grease a small loaf pan that fits in your air fryer.
- Pour the batter into the pan and smooth the top.
- Preheat the air fryer to 160°C (320°F).
- Air fry for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Step 3: Cool & Serve
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and enjoy warm or at room temperature.
