Instructions

Step 1: Prepare the Batter
  1. In a bowl, whisk together mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract.
  2. In another bowl, mix flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. Fold in the nuts if using.
Step 2: Air Fry
  1. Grease a small loaf pan that fits in your air fryer.
  2. Pour the batter into the pan and smooth the top.
  3. Preheat the air fryer to 160°C (320°F).
  4. Air fry for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Step 3: Cool & Serve
  1. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and enjoy warm or at room temperature.
