Instructions

Step 1: Prepare the Cookie Dough
  1. In a bowl, beat butter and sugar until light and fluffy.
  2. Mix in the egg, lemon zest, lemon juice, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
Step 2: Air Fry
  1. Preheat the air fryer to 160°C (320°F).
  2. Line the air fryer basket with parchment paper.
  3. Scoop tablespoon-sized dough balls and place them in the basket, leaving space between them.
  4. Air fry for 8–10 minutes or until lightly golden.
Step 3: Cool & Serve
  1. Let cookies cool for 5 minutes before transferring to a wire rack.
  2. Dust with powdered sugar before serving, if desired.
