Step 1: Prepare the Cookie Dough
- In a bowl, beat butter and sugar until light and fluffy.
- Mix in the egg, lemon zest, lemon juice, and vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until a soft dough forms.
Step 2: Air Fry
- Preheat the air fryer to 160°C (320°F).
- Line the air fryer basket with parchment paper.
- Scoop tablespoon-sized dough balls and place them in the basket, leaving space between them.
- Air fry for 8–10 minutes or until lightly golden.
Step 3: Cool & Serve
- Let cookies cool for 5 minutes before transferring to a wire rack.
- Dust with powdered sugar before serving, if desired.
