Step 1: Make the Cookie Dough
- In a bowl, cream together butter and sugar until light and fluffy.
- Mix in the egg and vanilla extract.
- In a separate bowl, whisk flour, baking powder, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Fold in crushed mini chocolate eggs.
Step 2: Air Fry
- Preheat the air fryer to 160°C (320°F).
- Press the dough into a parchment-lined air fryer pan.
- Air fry for 15–18 minutes or until edges are golden and center is set.
- Let cool completely before frosting.
Step 3: Prepare the Frosting & Decorate
- Beat butter until creamy, then mix in powdered sugar, milk, and vanilla.
- Add food coloring if desired.
- Spread frosting over the cooled cookie bars.
- Top with extra mini chocolate eggs.
- Slice into bars and serve!
