Step 1: Prepare the Batter
- In a bowl, cream together butter and sugar until light and fluffy.
- Mix in eggs, vanilla extract, and coconut milk.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Fold in crushed pineapple and shredded coconut.
Step 2: Air Fry
- Grease a cake pan that fits in your air fryer.
- Pour the batter into the pan and smooth the top.
- Preheat the air fryer to 160°C (320°F).
- Air fry for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before glazing.
Step 3: Make the Coconut Glaze & Serve
- Mix powdered sugar with coconut milk until smooth.
- Drizzle over the cooled cake.
- Sprinkle with toasted shredded coconut.
- Slice and enjoy!
