Instructions

Step 1: Prepare the Batter
  1. In a bowl, cream together butter and sugar until light and fluffy.
  2. Mix in eggs, vanilla extract, and coconut milk.
  3. In a separate bowl, whisk flour, baking powder, baking soda, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Fold in crushed pineapple and shredded coconut.
Step 2: Air Fry
  1. Grease a cake pan that fits in your air fryer.
  2. Pour the batter into the pan and smooth the top.
  3. Preheat the air fryer to 160°C (320°F).
  4. Air fry for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let the cake cool completely before glazing.
Step 3: Make the Coconut Glaze & Serve
  1. Mix powdered sugar with coconut milk until smooth.
  2. Drizzle over the cooled cake.
  3. Sprinkle with toasted shredded coconut.
  4. Slice and enjoy!
