Instructions

Step 1: Prepare the Batter
  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, beat the egg, buttermilk, melted butter, and vanilla extract.
  3. Gradually mix the dry ingredients into the wet ingredients until just combined.
  4. Fold in the chopped rhubarb.
Step 2: Air Fry
  1. Grease or line 8 silicone muffin cups.
  2. Fill each cup about ¾ full with batter.
  3. Sprinkle brown sugar on top if desired.
  4. Preheat the air fryer to 160°C (320°F).
  5. Air fry for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
Step 3: Cool & Serve
  1. Let the muffins cool in the cups for 5 minutes before transferring to a wire rack.
  2. Enjoy warm or at room temperature.
