Instructions
Step 1: Prepare the Batter
- In a bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat the egg, buttermilk, melted butter, and vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in the chopped rhubarb.
Step 2: Air Fry
- Grease or line 8 silicone muffin cups.
- Fill each cup about ¾ full with batter.
- Sprinkle brown sugar on top if desired.
- Preheat the air fryer to 160°C (320°F).
- Air fry for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
Step 3: Cool & Serve
- Let the muffins cool in the cups for 5 minutes before transferring to a wire rack.
- Enjoy warm or at room temperature.
