Step 1: Prepare the Batter
- Preheat your oven to 180°C (350°F). Grease a muffin tin.
- In a large bowl, whisk together flour, sugar, and coconut.
- Add eggs, milk, melted butter, lemon juice, lemon zest, vanilla extract, and salt.
- Whisk until the mixture is smooth.
Step 2: Bake
- Pour the batter evenly into the greased muffin tin, filling each cup about ¾ full.
- Bake for 22–25 minutes until golden and set.
- Allow to cool for 10 minutes before carefully removing from the tin.
Step 3: Serve & Enjoy
- Dust with powdered sugar for extra sweetness.
- Serve warm or chilled for a refreshing treat.
