Step 1: Prepare the Batter
  1. Preheat your oven to 180°C (350°F). Grease a muffin tin.
  2. In a large bowl, whisk together flour, sugar, and coconut.
  3. Add eggs, milk, melted butter, lemon juice, lemon zest, vanilla extract, and salt.
  4. Whisk until the mixture is smooth.
Step 2: Bake
  1. Pour the batter evenly into the greased muffin tin, filling each cup about ¾ full.
  2. Bake for 22–25 minutes until golden and set.
  3. Allow to cool for 10 minutes before carefully removing from the tin.
Step 3: Serve & Enjoy
  1. Dust with powdered sugar for extra sweetness.
  2. Serve warm or chilled for a refreshing treat.
