Instructions

Step 1: Preheat & Prepare
  1. Preheat your oven to 180°C (350°F).
  2. Grease and line a round cake tin with parchment paper.
Step 2: Mix the Batter
  1. In a bowl, whisk together ricotta, eggs, sugar, vanilla, lemon zest, and lemon juice until smooth.
  2. Gently fold in ground almonds, baking powder, and salt until well combined.
Step 3: Bake
  1. Pour the batter into the prepared cake tin and smooth the top.
  2. Bake for 35–40 minutes until golden brown and a skewer comes out clean.
Step 4: Cool & Serve
  1. Allow to cool completely before removing from the tin.
  2. Dust with powdered sugar before serving.
