Step 1: Prepare the Base
- Mix the crushed digestive biscuits with melted butter until well combined.
- Press the mixture firmly into the base of a 20cm springform tin.
- Chill in the fridge for 30 minutes to set.
Step 2: Make the Filling
- In a bowl, whisk the cream cheese, icing sugar, vanilla extract, lemon juice, and lime juice until smooth.
- In a separate bowl, whip the double cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until combined.
Step 3: Assemble & Chill
- Spread the cheesecake filling evenly over the biscuit base.
- Smooth the top and sprinkle with extra lemon and lime zest.
- Chill in the fridge for at least 4 hours or overnight until set.
