Instructions

Step 1: Prepare the Base
  1. Mix the crushed digestive biscuits with melted butter until well combined.
  2. Press the mixture firmly into the base of a 20cm springform tin.
  3. Chill in the fridge for 30 minutes to set.
Step 2: Make the Filling
  1. In a bowl, whisk the cream cheese, icing sugar, vanilla extract, lemon juice, and lime juice until smooth.
  2. In a separate bowl, whip the double cream until soft peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until combined.
Step 3: Assemble & Chill
  1. Spread the cheesecake filling evenly over the biscuit base.
  2. Smooth the top and sprinkle with extra lemon and lime zest.
  3. Chill in the fridge for at least 4 hours or overnight until set.
