Step 1: Make the Crust
- Preheat the oven to 175°C (350°F).
- In a bowl, mix flour and sugar. Cut in butter until the mixture is crumbly.
- Add egg yolk and cold water, mixing until dough forms.
- Press into mini tart molds and bake for 10–12 minutes until golden.
- Let them cool completely.
Step 2: Prepare the Custard
- Heat milk in a saucepan until warm.
- In a bowl, whisk sugar, egg yolks, and cornstarch.
- Gradually pour warm milk into the mixture, whisking constantly.
- Return to saucepan and cook on low heat, stirring until thick.
- Remove from heat, stir in vanilla and butter, and let cool.
Step 3: Assemble the Mini Tarts
- Fill cooled tart shells with custard.
- Top with fresh fruit in a decorative pattern.
- Warm apricot jam and brush over fruit for a glossy finish.
