Instructions

Step 1: Make the Crust
  1. Preheat the oven to 175°C (350°F).
  2. In a bowl, mix flour and sugar. Cut in butter until the mixture is crumbly.
  3. Add egg yolk and cold water, mixing until dough forms.
  4. Press into mini tart molds and bake for 10–12 minutes until golden.
  5. Let them cool completely.
Step 2: Prepare the Custard
  1. Heat milk in a saucepan until warm.
  2. In a bowl, whisk sugar, egg yolks, and cornstarch.
  3. Gradually pour warm milk into the mixture, whisking constantly.
  4. Return to saucepan and cook on low heat, stirring until thick.
  5. Remove from heat, stir in vanilla and butter, and let cool.
Step 3: Assemble the Mini Tarts
  1. Fill cooled tart shells with custard.
  2. Top with fresh fruit in a decorative pattern.
  3. Warm apricot jam and brush over fruit for a glossy finish.
