Instructions

Step 1: Prepare the Shortcrust Pastry
  1. In a large bowl, mix flour, sugar, baking powder, salt, and lemon zest.
  2. Add cubed butter and rub into the dry ingredients until crumbly.
  3. Mix in the egg until a dough forms. Wrap and chill for 30 minutes.
Step 2: Make the Pastry Cream
  1. In a saucepan, heat milk until warm.
  2. In a bowl, whisk egg yolks with sugar and cornstarch until smooth.
  3. Gradually whisk in the warm milk, then return to saucepan and cook over medium heat, stirring until thickened.
  4. Remove from heat and stir in vanilla. Cool completely.
Step 3: Assemble and Bake
  1. Preheat oven to 350°F (175°C). Grease a tart pan.
  2. Roll out 2/3 of the dough and press into the pan. Fill with cooled pastry cream.
  3. Top with remaining dough, crimp edges, and sprinkle with pine nuts if using.
  4. Bake for 30 minutes or until golden. Cool and dust with powdered sugar.
