Instructions

Step 1: Cook the Rice
  1. Preheat oven to 325°F (160°C). Grease a baking dish.
  2. In a medium saucepan, cook the rice with 1 cup of water until soft and water is absorbed. Let it cool slightly.
Step 2: Mix and Bake
  1. In a large bowl, whisk together milk, sugar, salt, eggs, vanilla, and cinnamon.
  2. Stir in cooked rice and raisins (if using). Pour into the prepared baking dish.
  3. Dot with butter and sprinkle with additional cinnamon.
  4. Bake uncovered for 50–60 minutes, stirring once halfway, until the top is golden and custard is set.
