Step 1: Mix the Filling
- In a large bowl, combine rice, black beans, corn, bell pepper, onion, chili powder, cumin, salt, pepper, and salsa.
- Mix until well combined. Fold in half the cheese.
Step 2: Bake in the Air Fryer
- Preheat air fryer to 350°F (175°C).
- Transfer mixture to a greased air fryer-safe baking dish.
- Sprinkle remaining cheese on top.
- Air fry for 12–15 minutes, or until cheese is bubbly and golden.
Step 3: Serve
- Let rest for 5 minutes. Garnish with cilantro and serve warm.
