Step 1: Prepare the Batter
- Preheat oven to 175°C (350°F). Grease a cake pan or line with parchment paper.
- In a bowl, whisk together eggs, oil, vanilla, sugar, and brown sugar.
- In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add the dry ingredients to the wet mixture and mix until just combined.
- Fold in grated carrots and walnuts.
Step 2: Bake
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35–40 minutes or until a toothpick comes out clean.
- Let it cool completely before slicing or frosting.
