Instructions

Step 1: Prepare the Batter
  1. Preheat oven to 175°C (350°F). Grease a cake pan or line with parchment paper.
  2. In a bowl, whisk together eggs, oil, vanilla, sugar, and brown sugar.
  3. In another bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet mixture and mix until just combined.
  5. Fold in grated carrots and walnuts.
Step 2: Bake
  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 35–40 minutes or until a toothpick comes out clean.
  3. Let it cool completely before slicing or frosting.
