Step 1: Prepare the Crust
- Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar together.
- Press into a parchment-lined square baking pan that fits your air fryer.
Step 2: Make the Filling
- In a bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, beating after each addition. Stir in vanilla and sour cream.
- Pour filling over crust and spread evenly.
Step 3: Air Fry and Chill
- Preheat air fryer to 150°C (300°F).
- Air fry for 18–20 minutes, or until the center is set but slightly jiggly.
- Cool at room temperature, then refrigerate for at least 2 hours before slicing.
