Step 1: Make the Cheesecake Filling
  1. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Chill for 10 minutes to firm up slightly.
Step 2: Prepare the Dough
  1. In a separate bowl, cream together softened butter and sugar. Add eggs and mix well.
  2. Stir in milk, then add flour, baking powder, cinnamon, and salt. Mix into a soft dough.
Step 3: Assemble the Cookies
  1. Take about 1.5 tablespoons of dough, flatten it, add a spoonful of cheesecake filling in the center, and top with another flattened dough piece. Seal edges to form a stuffed cookie.
Step 4: Air Fry
  1. Preheat air fryer to 160°C (320°F).
  2. Place cookies in a parchment-lined basket in a single layer. Air fry for 8–10 minutes or until golden brown.
Step 5: Cinnamon Sugar Coating
  1. While warm, brush each cookie with melted butter and toss in cinnamon sugar mixture.
