Step 1: Make the Batter
  1. In a large bowl, whisk together yogurt, sugar, and eggs until smooth.
  2. Stir in oil and vanilla extract (plus lemon zest if using).
  3. In a separate bowl, mix flour, baking powder, and salt. Gradually add to wet ingredients and mix until just combined.
Step 2: Air Fry
  1. Grease and line a cake pan that fits your air fryer.
  2. Pour batter into the pan and smooth the top.
  3. Preheat air fryer to 160°C (320°F). Air fry for 25–30 minutes or until a toothpick inserted in the center comes out clean.
  4. Cool before removing from the pan. Dust with powdered sugar if desired.
