Step 1: Prepare the Mixture
- In a pan, sauté onion and garlic in olive oil until softened. Add grated carrot and cook for 2 more minutes.
- In a bowl, mash the butter beans slightly (leave some whole for texture).
- Add the cooked vegetables, cream, breadcrumbs, herbs, Parmesan (if using), salt, and pepper. Mix well.
- Stir in chopped spinach or kale if using.
Step 2: Shape and Air Fry
- Shape the mixture into a loaf or individual patties and place in a greased air fryer-safe pan or tray.
- Preheat air fryer to 180°C (350°F).
- Air fry for 25–30 minutes or until golden brown and firm. Let it rest 5 minutes before serving.
