Step 1: Prepare the Mixture
  1. In a pan, sauté onion and garlic in olive oil until softened. Add grated carrot and cook for 2 more minutes.
  2. In a bowl, mash the butter beans slightly (leave some whole for texture).
  3. Add the cooked vegetables, cream, breadcrumbs, herbs, Parmesan (if using), salt, and pepper. Mix well.
  4. Stir in chopped spinach or kale if using.
Step 2: Shape and Air Fry
  1. Shape the mixture into a loaf or individual patties and place in a greased air fryer-safe pan or tray.
  2. Preheat air fryer to 180°C (350°F).
  3. Air fry for 25–30 minutes or until golden brown and firm. Let it rest 5 minutes before serving.
