Step 1: Preheat Oven
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easier cleanup.
Step 2: Season Potatoes
- In a large bowl, toss the chopped Yukon Gold potatoes with olive oil, minced garlic, Parmesan, oregano, paprika, salt, and pepper until evenly coated.
Step 3: Bake
- Spread the potatoes out on the prepared baking sheet in a single layer, cut side down for max crispiness.
- Bake for 35–40 minutes or until golden brown and crispy, flipping halfway through for even cooking.
Step 4: Serve
- Garnish with fresh chopped parsley if desired and serve immediately while hot and crispy.
