Step 1: Prepare the Dough
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter and both sugars until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture.
- Stir in oats, coconut, and chocolate chips until fully combined.
Step 2: Bake
- Scoop tablespoon-sized balls of dough onto the prepared sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes, until edges are golden and centers are set.
- Cool on the pan for 5 minutes before transferring to wire racks.
