Step 1: Sauté Vegetables
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
- Add garlic and sauté for 1 minute more.
Step 2: Build the Base
- Stir in shredded chicken, white beans, green chilies, chicken broth, and all seasonings (Cajun, cumin, oregano, salt, and pepper).
- Bring to a gentle boil, then reduce heat and simmer for 15 minutes.
Step 3: Add Creaminess
- Stir in sour cream and heavy cream. Let simmer for 5 more minutes until fully heated and slightly thickened.
Step 4: Serve
- Ladle into bowls and top with your favorite toppings like cheese, green onions, or jalapeños. Enjoy warm!
