Instructions
Step 1: Sauté Veggies
- In a large pot, melt butter over medium heat. Add onion and jalapeños. Cook until softened, about 5 minutes.
- Add garlic and cook for another 1 minute until fragrant.
Step 2: Add Broth and Simmer
- Pour in chicken broth and bring to a simmer. Let cook for 5 minutes.
Step 3: Stir in Cheese and Cream
- Reduce heat to low and stir in cream cheese until melted and smooth.
- Add shredded cheeses and stir until fully melted.
Step 4: Add Chicken and Bacon
- Stir in grilled chicken, crumbled bacon, and heavy cream. Season with salt, pepper, and optional smoked paprika or chipotle powder.
- Simmer for another 5–10 minutes until hot and thickened to your liking.
Step 5: Serve
- Ladle soup into bowls and top with extra bacon, cheese, green onions, or cilantro.
