Step 1: Cook the Potatoes
- Wash and poke holes in the potatoes with a fork.
- Lightly spray them with olive oil and sprinkle with salt.
- Preheat air fryer to 200°C (400°F). Place the potatoes in the air fryer basket and cook for 25–30 minutes or until fork tender, flipping halfway.
Step 2: Prepare Taco Meat
- While potatoes cook, brown the ground beef in a skillet over medium heat.
- Drain excess fat, then add taco seasoning and 1/4 cup of water. Simmer until thickened (about 5 minutes).
Step 3: Assemble & Serve
- Once potatoes are done, slice each in half and fluff the insides slightly with a fork.
- Spoon the taco meat over the potatoes, then top with shredded cheddar cheese.
- Return to the air fryer for 2 minutes to melt the cheese (optional).
- Top with sour cream, diced tomatoes, and cilantro if desired. Serve warm!
