Step 1: Make the Mushroom Filling
- In a skillet, melt butter over medium heat. Sauté mushrooms and garlic until soft and browned (about 5 minutes).
- Remove from heat. Stir in cream cheese, mozzarella, salt, and pepper until well combined. Set aside to cool.
Step 2: Prepare the Chicken
- Butterfly each chicken breast by slicing horizontally without cutting all the way through. Open like a book.
- Season inside and out with salt, pepper, and paprika.
- Spoon the mushroom mixture onto one side of each breast, then fold over and secure with toothpicks or kitchen twine.
Step 3: Air Fry
- Preheat air fryer to 190°C (375°F).
- Brush chicken with olive oil. Place in the air fryer basket.
- Air fry for 18–20 minutes, flipping halfway through, until internal temperature reaches 74°C (165°F).
Step 4: Serve
- Let rest for 5 minutes. Slice and serve with pan juices or a side of roasted vegetables.
