Cheesy Garlic Butter Mushroom Stuffed Chicken

Instructions

Step 1: Make the Mushroom Filling
  1. In a skillet, melt butter over medium heat. Sauté mushrooms and garlic until soft and browned (about 5 minutes).
  2. Remove from heat. Stir in cream cheese, mozzarella, salt, and pepper until well combined. Set aside to cool.
Step 2: Prepare the Chicken
  1. Butterfly each chicken breast by slicing horizontally without cutting all the way through. Open like a book.
  2. Season inside and out with salt, pepper, and paprika.
  3. Spoon the mushroom mixture onto one side of each breast, then fold over and secure with toothpicks or kitchen twine.
Step 3: Air Fry
  1. Preheat air fryer to 190°C (375°F).
  2. Brush chicken with olive oil. Place in the air fryer basket.
  3. Air fry for 18–20 minutes, flipping halfway through, until internal temperature reaches 74°C (165°F).
Step 4: Serve
  1. Let rest for 5 minutes. Slice and serve with pan juices or a side of roasted vegetables.
