Instructions

Step 1: Prepare the Strawberries
  1. Wash and dry the strawberries.
  2. Slice off the green tops and cut an “X” into the tip of each strawberry, going about ¾ of the way down to create space for filling.
  3. Gently spread the berries open to hold the filling.
Step 2: Make the Cheesecake Filling
  1. In a bowl, whip the heavy cream until stiff peaks form. Set aside.
  2. In a separate bowl, beat cream cheese, sour cream, sugar, and vanilla until smooth and creamy.
  3. Gently fold the whipped cream into the cheesecake mixture until fully combined.
Step 3: Fill and Garnish
  1. Transfer filling to a piping bag or ziplock bag with the corner snipped.
  2. Pipe the cheesecake mixture into each prepared strawberry.
  3. Sprinkle tops with crushed graham crackers or mini chocolate chips if desired.
Step 4: Chill and Serve
  1. Refrigerate for at least 30 minutes before serving.
