Step 1: Make the Dough
- In a bowl, combine flour, sugar, and salt.
- Stir in oil and gradually add water until a smooth dough forms.
- Cover and let it rest for 15 minutes.
Step 2: Prepare the Filling
- Mix muscovado sugar with a little flour to help absorb moisture.
- If using ube or mongo paste, mix it with sugar or use separately as an alternate filling.
Step 3: Assemble the Piaya
- Divide dough into 8 balls. Flatten each into a disc.
- Place about 1 tablespoon of filling in the center, then fold and seal like a dumpling.
- Gently flatten each filled dough ball into a thin round disc with a rolling pin.
- Sprinkle with sesame seeds if desired and gently press to stick.
Step 4: Air Fry
- Preheat air fryer to 350°F (175°C).
- Lightly spray both sides of the piaya with oil.
- Place in air fryer basket (work in batches if needed).
- Air fry for 6–8 minutes per side or until golden with slight charring.
Step 5: Serve
- Let cool slightly. Serve warm or at room temperature.
- Enjoy as is or pair with coffee or tea!
