Step 1: Cook the Base
- In a saucepan over medium heat, combine coconut milk, evaporated milk, condensed milk, sugar, and salt. Stir until well mixed.
- Add the corn and stir occasionally until it starts to simmer.
Step 2: Thicken the Mixture
- Lower the heat and slowly pour in the cornstarch-water mixture while continuously stirring.
- Keep stirring until the mixture becomes very thick and smooth (about 5–8 minutes).
Step 3: Chill and Set
- Pour the thickened mixture into a lightly greased 8×8 pan. Smooth the top with a spatula.
- Let it cool at room temperature, then refrigerate for at least 1–2 hours or until fully set.
Step 4: Garnish and Serve
- Top with shredded cheese or toasted coconut before serving.
- Slice into squares and enjoy cold!
