Step 1: Cook the Chicken
- Season chicken pieces with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium heat. Add chicken and cook until golden and fully cooked, about 6–8 minutes.
- Add minced garlic and cook for 1–2 minutes until fragrant.
- Stir in honey, soy sauce, apple cider vinegar, and butter. Simmer for 3–5 minutes until sauce thickens slightly. Set aside.
Step 2: Make the Creamy Rice
- In a large saucepan, combine rice and chicken broth. Bring to a boil, then reduce heat and simmer covered for 15 minutes, or until rice is tender.
- Stir in heavy cream, mozzarella, cream cheese, Parmesan, butter, Italian seasoning, salt, and pepper. Mix until creamy and smooth.
Step 3: Serve
- Spoon creamy rice onto plates and top with honey garlic chicken bites.
- Garnish with fresh parsley and serve warm.
