Instructions
Step 1: Brown the Beef
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain any excess grease.
Step 2: Sauté Vegetables
- Add onion and bell pepper to the pot.
- Cook until softened, about 5 minutes.
Step 3: Add Rice & Liquids
- Stir in rice, diced tomatoes (undrained), chicken broth, salt, pepper, and Cajun seasoning (if using).
Step 4: Simmer
- Bring mixture to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
Step 5: Finish & Serve
- Stir in parsley (if using) before serving.
- Serve hot and enjoy.
