Instructions
Step 1: Make the Batter
- In a large mixing bowl, cream the butter and sugar until light and fluffy (about 3–4 minutes).
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Fold in the crushed pineapple and chopped strawberries gently to avoid overmixing.
Step 2: Air Fryer Method
- Preheat the air fryer to 150°C (300°F).
- Grease and line a loaf pan or small bundt pan that fits inside your air fryer.
- Pour the batter into the pan and smooth the top.
- Air fry for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 10 minutes before removing from the pan. Cool completely before slicing.
Oven Method (Original)
- Preheat oven to 160°C (325°F).
- Prepare a loaf pan or bundt pan as above.
- Bake for 70–75 minutes, or until a toothpick inserted into the center comes out clean.
- Cool before serving.
