Step 1: Make the Crust
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter until combined.
- Press mixture into a 9-inch pie dish. Bake for 8–10 minutes. Let cool completely.
Step 2: Make the Cream Filling
- In a saucepan, whisk sugar, cornstarch, and salt.
- Gradually whisk in milk and cook over medium heat until thickened.
- Temper egg yolks with some of the hot mixture, then return to the pan. Cook 2 more minutes.
- Remove from heat, stir in butter and vanilla. Pour into cooled crust. Chill for 30 minutes.
Step 3: Prepare the Peanut Butter Layer
- Beat peanut butter and powdered sugar until smooth.
- Whip heavy cream to stiff peaks and fold into peanut butter mixture.
- Spread evenly over the chilled cream filling.
Step 4: Garnish & Chill
- Decorate with whipped cream rosettes or cookie crumbs if desired.
- Chill pie for at least 3 hours before serving.
