Roasted Sweet Potato Rounds with Honey & Feta

Instructions

Step 1: Preheat the Oven

1. Preheat oven to 425°F (220°C).
2. Line a baking sheet with parchment paper.

Step 2: Season the Sweet Potatoes

1. Arrange sweet potato rounds on the prepared sheet.
2. Brush both sides with olive oil.
3. Sprinkle evenly with salt, black pepper, and smoked paprika.

Step 3: Roast

1. Roast for 25–30 minutes, flipping halfway through, until golden and tender.

Step 4: Finish & Serve

1. Remove from oven and drizzle with honey.
2. Sprinkle with crumbled feta cheese and fresh parsley.
3. Serve warm and enjoy!
