Step 1: Prepare the Crust
  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix gluten-free flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs.
  3. Add ice water one tablespoon at a time until dough comes together. Form into a ball, wrap, and refrigerate for 30 minutes.
  4. Roll out the dough between parchment paper and transfer to a 9-inch pie dish. Trim edges and flute as desired.
Step 2: Make the Apple Filling
  1. In a large bowl, toss apple slices with sugar, gluten-free flour, cinnamon, nutmeg, lemon juice, and vanilla until well coated.
  2. Spoon the apple mixture evenly into the prepared crust.
Step 3: Make the Crumb Topping
  1. In a separate bowl, combine gluten-free flour, brown sugar, and salt. Pour in melted butter and stir until crumbly.
  2. Sprinkle the crumb mixture evenly over the apples.
Step 4: Bake the Pie
  1. Bake for 45–50 minutes, or until the topping is golden brown and the apple filling is bubbling.
  2. Cover the edges with foil if they brown too quickly.
  3. Cool for at least 1 hour before slicing to allow the filling to set.
