Step 1: Prepare the Cake Base
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix together the yellow cake mix, egg, melted butter, pumpkin puree, and vanilla extract until well combined.
- Press the mixture evenly into the bottom of the prepared baking dish.
Step 2: Make the Pumpkin Spice Gooey Filling
- In a separate bowl, beat the softened cream cheese until smooth.
- Add the eggs, vanilla extract, pumpkin puree, melted butter, cinnamon, nutmeg, and cloves, and mix until fully combined.
- Gradually add the powdered sugar, mixing until smooth and creamy.
- Pour the gooey filling over the cake base and spread evenly.
Step 3: Bake the Cake
- Bake for 40–45 minutes, or until the edges are set but the center remains slightly gooey. Do not overbake.
- Let the cake cool completely in the pan.
Step 4: Make the Brown Sugar Cream Cheese Frosting
- In a large bowl, beat together the softened cream cheese, butter, and brown sugar until light and fluffy.
- Gradually add the powdered sugar, mixing until smooth.
- Stir in the vanilla extract.
Step 5: Frost the Cake
- Once the cake has cooled, spread the brown sugar cream cheese frosting generously over the top.
Step 6: Serve & Enjoy
- Slice and enjoy this rich, spiced pumpkin cake with its gooey filling and luscious frosting.
- Optional: Sprinkle chopped pecans or dust with cinnamon for extra indulgence.
