Step 1: Preheat the Oven
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: Cook the Filling
- Heat olive oil in a skillet over medium heat. Add mushrooms and sauté for 5–7 minutes until soft and golden.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Season with garlic powder, salt, and pepper. Remove from heat.
- Stir in softened cream cheese until melted and well combined.
Step 3: Assemble the Quesadillas
- Lay tortillas flat on a clean surface. Spread the spinach-mushroom mixture on one half of each tortilla.
- Sprinkle shredded cheese on top of the filling, then fold each tortilla in half to close.
Step 4: Bake Until Golden
- Place folded quesadillas on the prepared baking sheet.
- Lightly brush or spray the tops with olive oil for crispiness.
- Bake for 10–12 minutes, flipping halfway through, until golden brown and crisp.
Step 5: Serve and Enjoy
- Slice each quesadilla into wedges and serve warm with salsa, guacamole, or sour cream for dipping!
