Instructions

Step 1: Preheat the Oven
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Step 2: Cook the Filling
  1. Heat olive oil in a skillet over medium heat. Add mushrooms and sauté for 5–7 minutes until soft and golden.
  2. Add chopped spinach and cook until wilted, about 2 minutes.
  3. Season with garlic powder, salt, and pepper. Remove from heat.
  4. Stir in softened cream cheese until melted and well combined.
Step 3: Assemble the Quesadillas
  1. Lay tortillas flat on a clean surface. Spread the spinach-mushroom mixture on one half of each tortilla.
  2. Sprinkle shredded cheese on top of the filling, then fold each tortilla in half to close.
Step 4: Bake Until Golden
  1. Place folded quesadillas on the prepared baking sheet.
  2. Lightly brush or spray the tops with olive oil for crispiness.
  3. Bake for 10–12 minutes, flipping halfway through, until golden brown and crisp.
Step 5: Serve and Enjoy
  1. Slice each quesadilla into wedges and serve warm with salsa, guacamole, or sour cream for dipping!
