Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
Step 2: Prepare the Crust and Topping
- In a large mixing bowl, combine flour, rolled oats, brown sugar, baking soda, and salt.
- Pour in the melted butter and mix until the mixture becomes crumbly.
- Press half of the oat mixture firmly into the bottom of the baking dish to form a crust layer.
Step 3: Make the Rhubarb Filling
- In a separate bowl, mix granulated sugar and cornstarch together.
- Add the chopped rhubarb and vanilla extract, tossing until evenly coated.
- Spread the rhubarb mixture evenly over the prepared crust.
Step 4: Add the Topping and Bake
- Crumble the remaining oat mixture evenly over the rhubarb filling.
- Bake for 35–40 minutes, or until the top is golden brown and the filling is bubbly.
Step 5: Cool and Serve
- Allow the bars to cool completely in the pan on a wire rack before cutting into squares or bars.
