Instructions

Step 1: Preheat the Oven
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
Step 2: Prepare the Crust and Topping
  1. In a large mixing bowl, combine flour, rolled oats, brown sugar, baking soda, and salt.
  2. Pour in the melted butter and mix until the mixture becomes crumbly.
  3. Press half of the oat mixture firmly into the bottom of the baking dish to form a crust layer.
Step 3: Make the Rhubarb Filling
  1. In a separate bowl, mix granulated sugar and cornstarch together.
  2. Add the chopped rhubarb and vanilla extract, tossing until evenly coated.
  3. Spread the rhubarb mixture evenly over the prepared crust.
Step 4: Add the Topping and Bake
  1. Crumble the remaining oat mixture evenly over the rhubarb filling.
  2. Bake for 35–40 minutes, or until the top is golden brown and the filling is bubbly.
