Step 1: Preheat the Oil
- Heat about ½ inch of cooking oil in a large skillet over medium heat until hot and shimmering.
Step 2: Prepare the Coating
- In one bowl, whisk together the eggs and ½ cup milk.
- In another bowl, mix flour, garlic powder, onion powder, paprika, salt, and black pepper.
Step 3: Coat the Chops
- Dip each beef or lamb chop into the egg mixture, then dredge in the seasoned flour.
- Press lightly to make sure the coating sticks well.
Step 4: Fry to Perfection
- Fry chops for 4–5 minutes per side, or until golden brown and cooked through (internal temperature should reach 145°F / 63°C).
- Remove from the skillet and keep warm.
Step 5: Make the Turkey Bacon Gravy
- In the same skillet, cook chopped turkey bacon until crisp. Remove and set aside, leaving the drippings in the pan.
- Add butter to the drippings. Stir in 2 tablespoons flour and cook for 1 minute.
- Gradually whisk in 2 cups milk, stirring constantly until thickened and smooth.
- Season with salt and black pepper to taste, then stir in the crispy turkey bacon pieces.
Step 6: Serve and Enjoy
- Pour the creamy turkey bacon gravy generously over the fried chops.
- Serve hot with mashed potatoes, biscuits, or roasted vegetables.
