Step 1: Prepare the Topping Mixture
- In a bowl, whisk together the eggs, salt, and black pepper.
- Add chopped parsley, green onions, and cooked bacon. Stir well to combine.
Step 2: Assemble the Melts
- Place bread slices on a parchment-lined baking sheet.
- Add a slice of cheese to each bread slice.
- Spoon the egg-bacon mixture evenly over the top of each slice.
- Sprinkle with a little shredded cheese if desired.
Step 3: Bake
- Preheat the oven to 375°F (190°C).
- Bake for 12–15 minutes, or until the tops are golden and the eggs are fully set.
Step 4: Serve
- Remove from the oven and let cool slightly before serving.
