Instructions

Step 1: Preheat and Prep
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse and pat dry the mini potatoes. Using a small paring knife, carefully carve two eyes and a small mouth on each potato to resemble skull faces. Be creative!
Step 2: Season
  1. In a large bowl, mix together olive oil, lemon juice, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Add the carved potatoes and toss until evenly coated.
Step 3: Roast
  1. Place the potatoes on the prepared baking sheet, carved side up.
  2. Roast for 25–30 minutes, or until golden brown and crispy on the edges.
Step 4: Serve
  1. Remove from the oven and let cool slightly.
  2. Thread a few potatoes onto skewers for a spooky presentation or serve as bite-sized snacks with your favorite dipping sauce.
