Step 1: Prepare the Crust
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until well combined.
- Spoon a small amount into the bottom of each bite-sized cup or mold and press it down to form a firm crust.
Step 2: Make the Cheesecake Filling
- In a mixing bowl, beat softened cream cheese and powdered sugar until smooth and creamy.
- Add the heavy cream and vanilla extract, then continue mixing until the filling is light and fluffy.
Step 3: Assemble the Layers
- Spoon a small amount of vanilla pudding over the graham cracker crust in each mold.
- Add banana slices on top of the pudding.
- Layer the cheesecake filling over the banana pudding, smoothing the top evenly.
Step 4: Coat and Chill
- Gently press each cheesecake bite into crushed Nilla wafers to coat the outside for a crunchy texture.
- Refrigerate for at least 2 hours or until firm and set.
Step 5: Garnish and Serve
- Top each bite with a fresh banana slice before serving.
