Instructions

Step 1: Prepare the Rice Krispies Layer
  1. In a large pot, melt the butter over low heat.
  2. Add the mini marshmallows and stir until completely melted and smooth.
  3. Remove from heat and stir in Rice Krispies cereal until evenly coated.
  4. Spread the mixture onto a greased or parchment-lined sheet of wax paper, forming a thin rectangle about 1/2-inch thick.
Step 2: Make the Chocolate Peanut Butter Filling
  1. In a microwave-safe bowl, combine peanut butter and chocolate chips.
  2. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  3. Spread the mixture evenly over the Rice Krispies layer while it’s still warm.
Step 3: Roll It Up
  1. Starting from one short side, carefully roll the Rice Krispies layer into a tight log using the wax paper to help lift and guide it.
  2. Once rolled, wrap it completely in wax paper or plastic wrap.
Step 4: Chill & Slice
  1. Refrigerate for at least 1 hour, or until firm enough to slice.
  2. Unwrap and slice into 1-inch thick pieces.
Step 5: Serve
  1. Enjoy chilled or at room temperature. Store leftovers in the refrigerator for up to 5 days.
