Step 1: Prepare the Rice Krispies Layer
- In a large pot, melt the butter over low heat.
- Add the mini marshmallows and stir until completely melted and smooth.
- Remove from heat and stir in Rice Krispies cereal until evenly coated.
- Spread the mixture onto a greased or parchment-lined sheet of wax paper, forming a thin rectangle about 1/2-inch thick.
Step 2: Make the Chocolate Peanut Butter Filling
- In a microwave-safe bowl, combine peanut butter and chocolate chips.
- Microwave in 30-second intervals, stirring between each, until smooth and melted.
- Spread the mixture evenly over the Rice Krispies layer while it’s still warm.
Step 3: Roll It Up
- Starting from one short side, carefully roll the Rice Krispies layer into a tight log using the wax paper to help lift and guide it.
- Once rolled, wrap it completely in wax paper or plastic wrap.
Step 4: Chill & Slice
- Refrigerate for at least 1 hour, or until firm enough to slice.
- Unwrap and slice into 1-inch thick pieces.
Step 5: Serve
- Enjoy chilled or at room temperature. Store leftovers in the refrigerator for up to 5 days.
